Recipe – Pudina tal-hobz

Some parents have asked for the recipe of the Pudina tal-hobz.  Thanks to Ms Jennifer here it is:

Here is the Maltese Bread Pudding recipe (makes a dish of about 25cm by 40cm):
 
Ingredients for Pudding:
2 big loaves of Maltese bread
500 grams sugar
50 grams cocoa
3 Oranges (rind and juice)
1 Lemon (rind and juice)
200 grams sultanas
100 grams candid peel (konfettura)
3 eggs
100 grams flaked almonds
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 tablespoon honey
1 table spoon orange blossom water (ilma zghar)
 
Ingredients for decoration:
3 tablespoons desiccated coconut and a few whole almonds or hazelnuts for decoration
 
Soak the bread in water for a few minutes.  Squeeze out the water and using hands cut the bread into tiny pieces.  Add all the other ingredients (pudding list of ingredients) one by one, incorporating each time you add an ingredient.  Once all the ingredients are mixed in, line a dish (25cm by 40 cm) with greaseproof paper.  Put the mixture in the dish and level the pudding with a spoon.  Finally decorate with the desiccated coconut and whole almonds/hazelnuts on top.  Bake in a preheated oven (180°C) for about 50 minutes.
